Ajzah:
1 cup Akhrot
1 litre doodh
1 cup cheeni
4-5 drops lemo ka rus (appx. aadha lemo)
1/2 tsp nutmeg powder
1/2 tsp elaichi powder
3 tbs dahi
Method:
Pehlay doodh ko ubaal lein. Phir usmein lemo ka rus aur dahi daal ker achi tarahn mila lein. Pateeli ko cholay sey hata ker dhak ker 7-8 min ke liye rakh dein. Phir usko chaan lein aur saara paani phenk dein. Yeh khoya ban gaya.
Khoya ko ek pan mein daalein. Usmein elaichi powder aur nutmeg powder bhi daal dein. Phir usmein cheeni bhi daal dein. Paani sookhnay tak pakayen aur phir achi tarahn mila lein.
Phir aakhir mein ooper sey akhrot daal ker achi tarahn mila lein. Halka sa thanda kerke nikaal lein.
ENGLISH TRANSLATION:
Ingredients:
1 cup walnuts
1 litre milk
1 cup sugar
4-5 drops lemon juice (appx. half a lemon)
1/2 tsp nutmeg powder
1/2 tsp cardamom powder
3 tbs Yogurt
Method:
Pour the milk into a pan & boil. Then add lemon juice & yogurt. Mix well. Take it off the heat & cover the pan for 7-8 mins. Then drain the mixture. Make sure that you get rid of all the liquid & retain the solid.It will resemble khoya.
Put the khoya in a pan. Add cardamom powder & nutmeg powder. Add sugar. Cook till all water dries. Mix well.
Add the walnuts (either slightly crushed or whole). Mix well. Cool slightly & dish out.
